I haven’t had French bread pizzas for years but I used to love the chicken french bread pizza my high school served! It has been quite a few years since high school, and thankfully my tastes have matured a little. My French bread pizza version is topped with breaded chicken pieces, tangy pizza sauce, three types of cheese, and garnished with fresh basil. Not only are these pizzas good, but they look beautiful too! My husband’s eyes were wide when he walked in and saw what was for dinner! These would be fun to serve to company for a casual pizza night! They would be absolutely delicious done on the grill as a grilled french bread pizza!
How to make french bread pizza not soggy
The addition of a few simple steps really make these pizzas extra delicious. The garlic oil not only adds flavor, but helps brown up the crust so that it doesn’t get soggy when topped with all the toppings. Don’t skip that step of browning the bread! I also think the two types of cheeses are crucial. I always use fresh mozzarella when making chicken parmesan but the provolone gives this more of a pizza feel. I think without it, it would be more like an open faced sandwich.
The chicken pieces are so easy to make. If you have ever made shake and bake then you can handle this! My daughter loved helping me make them! She was eating them as fast as I was cooking them! This was a really family friendly meal, but didn’t taste like kid food, which are my favorite types of meals!

Chicken Parmesan French Bread Pizzas
Chicken Parmesan French Bread Pizza is a delicious way to make a pizza night more fun! Breaded chicken, melty mozzrella cheese, and pizza sauce tastes so good on a loaf of crusty french bread!
Ingredients
- 1 loaf of French bread halved down the middle
- 4 tbsp. olive oil
- 3 garlic cloves smashed
- 2/3 cup pizza sauce
- 8 oz. fresh mozzarella sliced
- 1/2 cup provolone shredded
- 1/4 cup parmesan cheese
- basil to garnish
- For the chicken:
- 1 chicken breast cut into small bite sized pieces
- 1/2 cup Italian seasoned bread crumbs
- 1/3 cup parmesan cheese
- 1 tsp. garlic powder
- 1 tbsp. olive oil
Instructions

Preheat oven to 450 degrees and line a large baking sheet with foil.

In a small bowl, add olive oil and garlic cloves. Let side for 10 minutes so that garlic infuses the oil.

Brush each half of French bread with garlic oil and then put in the oven for 5 minutes, or until golden brown. Remove from oven and lower the temperature to 375 degrees.

While bread is cooking, prepare the chicken. In a small ziploc bag, add bread crumbs, parmesan cheese and garlic powder. Shake to distribute. Toss chicken pieces in olive oil and then add chicken to the bread crumb bag. Shake bag until all pieces are coated evenly.

Preheat a non-stick skillet to medium heat and drizzle with olive oil. One hot, add chicken pieces and cook for 4-5 minutes or until cooked through.

Once chicken is cooked, you can assemble your pizza. Spread an even amount of pizza sauce on each piece of bread. Next, add the chicken pieces. Cover chicken with fresh mozzarella and then provolone cheese. Sprinkle with parmesan cheese. Put in oven and bake for about 5 minutes, or until cheese melts. Keep an eye on the bread so that it doesn't get too brown! Tent with foil if browning too fast.

Remove from oven and sprinkle with fresh basil. You can drizzle with any remaining garlic oil for additional flavor! Enjoy!
