I promise you guys, if you like your cookies soft and tender, then you will love these peanut butter cookies. They literally melt in your mouth and are amazingly good. My daughter and I have been fighting over them since I made them!

I don’t do a ton of holiday baking, but I like to make a few easy, but delicious cookies, to have in the freezer in the event of company or unexpected guests, and of course, for us to munch on! Christmas season will be upon us before we know it and I like knowing what I will be baking in advance.

Peanut butter cookies are my absolute favorite and while I love my recipe for four ingredient peanut butter cookies, I wanted a slightly different texture in my cookies this year. After a little trial and error, I achieved the absolutely best soft baked texture. I will never make another peanut butter cookie recipe again!

How to make soft peanut butter cookies?

There are a few tricks to ensure that you get a soft and chewy cookie. First, make sure that your butter is soft, but in no way melted. Room temperature ingredients, including your eggs, helps make a fluffy and not flat cookie.

The second trick is in the baking. I put my cookie dough on a silicone baking mat and then bake on the bottom oven rack. The bottom rack helps the cookie back through, but doesn’t brown the top.

Easy and Soft Peanut Butter Cookies

Finally, do not over bake. The cookies look very soft when you pull them out of the oven. Leave them on the cookie sheet for five minutes, and they will continue to bake and set up. Don’t move them to the cooling rack too early or they may fall apart.

The Best Soft Baked Peanut Butter Cookies

This recipe for peanut butter cookies makes the softest, best tasting peanut butter cookies ever!

Ingredients

Dry Ingredients

  • 1 1/4 cups flour
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda

Cookie Dough

  • 1/2 cup salted butter (1 stick) room temperature
  • 1/3 cup peanut butter do not use natural
  • 1/2 cup granulated white sugar plus more for rolling
  • 1/2 cup brown sugar
  • 2 tsp vanilla
  • 1 egg room temperature

Instructions

  1. Preheat oven to 350 degrees. Line a baking sheet with a silicone baking mat.

  2. Mix together dry ingredients in a bowl. Set aside.

  3. In the bowl of a stand mixer, add peanut butter and butter. Mix on medium until well combined.

  4. Add sugars and then mix 2-3 minutes, or until well combined.

  5. Add egg and vanilla. Stir to combine.

  6. Slowly add in dry ingredients and mix for 30 seconds, do not overmix.

  7. Take 2 tbsp of cookie dough and roll into a ball. Roll in granulated sugar and place on cookie sheet. Replace until no dough remains., Bake on bottom oven rack for 9-10 minutes. Remove promptly from oven and let sit on cookie sheet for 5 minutes. Remove from sheet and place on cooling rack.

  8. Once cool, store in an airtight container for 5 days, or freeze.
