We have been making mug cakes for a couple years now, and it takes a little work to find the perfect balance of ingredients. This is not the type of recipe where you want to wing it! Definitely find a good recipe and use it! You also want to make sure to use a microwave safe mug or ramekin and you do not want to overcook it!

I love mug cakes. They are simple, quick, and satisfy your sweet cravings. We make mug cakes year round and I know that this peanut butter cookie version will definitely be added to our rotation! After making these Healthier Peanut Butter Cup Mini Pies , I have been experimenting with other non-dairy dessert recipes, and was able to make this Microwave Mug Cake non-dairy! I swapped out regular milk for almond milk, which worked perfectly! If you are not concerned about your dairy intake, feel free to use regular milk!

Peanut Butter Cookie Mug Cake

You can’t have dessert without whipped topping, and I was so excited to find this Reddi-wip® at Walmart that is made with almond milk! It is deliciously creamy, gluten-free, and vegan. It has all the cravable flavors of regular Reddi-wip® without dairy, artificial flavors, or artificial sweeteners. It tastes great on any dessert, fruit, or even a dollop in your morning coffee! You can add a little, enjoy a lot!

Peanut Butter Cookie Microwave Mug Cake

This non-dairy Peanut Butter Cookie Microwave Mug Cake Recipe is a delicious treat for when you want dessert with barely any effort!

Ingredients

  • 3 heaping tbsp peanut butter
  • 3 tbsp flour, all purpose
  • 3 tsp white sugar
  • 4 tbsp vanilla sweetened or plain almond milk can substitute regular milk
  • 1/2 tsp baking powder
  • 2 tbsp Reddi-wip® Almond Non-dairy Whipped Topping
  • 1 pinch salt
  • 1 tsp vanilla

Instructions

  1. Add all ingredients to a microwave safe container. Whisk well, until no lumps remain.

  2. Place in the microwave and cook for 35 seconds. Remove from microwave and lightly touch the middle to see if its cooked through. 

  3. For a gooey cookie, cook no longer than 45 minutes. For a firmer cooker, cook for 1 minute.

  4. Let cool 1 minute then topped with Reddi-Wip.
