Summertime is in full swing and that means its time that the berry farms are bursting with berries! We have a few local berry farms and it is so fun to go pick fruit there with the kids and then come home and make some amazing desserts! If you don’t have any berry farms, store bought works just as well!

This easy puff pastry recipe is the perfect  sweet treat for breakfast or brunch and serves well as a dessert, too! I usually have cream cheese in my fridge and puff pastry in my freezer so I just had to grab some blueberries and strawberries. This dessert recipe has so few ingredients which makes me like it even more! I love a cup of coffee with my desserts, and the tang of cream cheese and sweetness of the berries pairs perfectly with coffee!

How to braid puff pastry

If you have never braided puff pastry before, it really is so easy, so don’t be intimidated.  If you are wondering how to braid pastry, then the trick is to use a sharp pizza cutter! It cuts the dough into quick and easy strips and is way easier and more controlled than using a knife.07 Then you just overlap them until you get to the end. Tuck the edge over the top and you are done! A brushing of egg gets the puff pastry golden brown and a sprinkle of sugar adds some shine! I first braided pastry in this chicken and broccoli crescent braid and I can’t believe I was intimidated by this technique!

I love versatile recipes and none are more versatile than this one! You can substitute any fruit you like, although I love strawberries and blueberries for some patriotic stripes! Slices of peaches would be amazing once they are in season, too! You could also add raspberries for even more of a punch of color!

Summer Berry Puff Pastry

This Summer Berry Puff Pastry is full of summer berries and while it looks like it was from an expensive bakery, you can make this easy recipe in only minutes!

Ingredients

  • 1 9 inch sheet puff pastry, defrosted but cold
  • 4 oz. cream cheese softened
  • 1/4 plus 1 tbsp. white sugar
  • 2 tsp. vanilla
  • 1/2 cup blueberries washed and dried completely
  • 1/2 cup sliced strawberries washed and dried completely
  • 1 egg beaten

Instructions

  1. Preheat oven to 400 degrees. Line a baking sheet with parchment paper or a non stick baking mat.
  2. In a small bowl, mix together cream cheese, 1/4 cup sugar, and vanilla until smooth.
  3. Lay your puff pastry on the non stick mat. Roll out slightly with a rolling pin. Smooth together seams if necessary.
  4. Use a pizza cutter to score a rectangle in the middle. Do not cut all the way through. Spread cream cheese mixture evenly across the rectangle.
  5. Layer cream cheese with rows of strawberries and blueberries.
  6. Using a pizza cutter, cut strips on a diagonal on both sides of the fruit. Fold pieces over one another. Once you get to the end, tuck ends up on top. Brush with beaten egg and sprinkle with remaining sugar. Put back in fridge for 10-15 minutes to rechill.
  7. Remove from fridge and bake in the oven for 16-20 minutes, or until golden brown. Let cool on a wire rack. Serve room temperature.

    Amazing Amanda, tried this a couple of times now with varying fruits, raspberries are also great to use along with blackberries. Thanks for the recipe.

    My only suggestion would be to remind your readers to completely dry the berries. If they are too wet, the pastry will be a little wet away from the edges. So my second try turned out PERFECTLY. I was so pleased at all the compliments. It is pretty and delicious!
