Grilled BBQ Cheddar Pork Sandwiches

It is my favorite cooking season of the year when all the ingredients and produce seem so much fresher and nearly every dinner can be cooked on the grill.  These Grilled BBQ Cheddar Pork Sandwiches are prepared completely on the grill and get dinner on the table quickly!

Grilled BBQ Cheddar Pork Sandwiches

I used a Smithfield®  Slow Smoked Mesquite Flavor Loin Filet and it is the perfect flavor base for these sandwiches! The smoky flavor of the pork goes together so well with the bbq sauce and sharp cheddar cheese! Garlic mayonnaise and arugula round of the delicious flavors in this sandwich and you seriously won’t believe how good this simple meal is!

Grilled BBQ Cheddar Pork Sandwiches

Using an already marinated piece of meat saves so much time! Normally you have to prepare a marinade in advance and let it sit for a while to really absorb the flavors. All that work is already done for you here and all you need to do it cook the pork! I sliced my tenderloin into medallions before grilling to save even more time. The smaller pieces cook up so quickly. While the pork rests off the grill, throw the buns on the grates to get all toasty. Once those are those, you assemble the sandwiches! So much flavor but barely any cooking is involved!

Pork is such a versatile meat and these marinated pork loins, roasts and filets come in tons of different flavors and are so easy to prepare. In the winter, I love to roast them in the oven for a hearty, comforting meal or you can throw them in a pan for a quick stir fry! You won’t need the entire loin for these Grilled BBQ Cheddar Pork Sandwiches, and the grilled medallions make for great leftovers! The smoky flavors from this mesquite version are so good wrapped up in a tortilla with some rice, beans, and cheese for a quick and easy burrito!

Grilled BBQ Cheddar Pork Sandwiches

I love this time of the year for the change in the weather, but May is seriously a crazy month. School programs, soccer games,  field trips, and graduations make for hectic evenings and some nights I have no idea when we will fit in time for dinner! These Grilled BBQ Cheddar Pork Sandwiches are full of so much flavor but are ready so fast thanks to Smithfield® Marinated Fresh Pork! I hope you love these sandwiches as much as we do!

Grilled BBQ Cheddar Pork Sandwiches

Servings 4 Sandwiches

Ingredients

  • 1 Smithfield® Slow Smoked Mesquite Flavor Loin Filet sliced into medallions
  • 4 sandwich rolls with a thick crust
  • 1/2 cup BBQ sauce
  • 1/4 cup mayonnaise
  • 2 garlic cloves minced
  • 4 slices cheddar cheese
  • 1/2 red onion sliced
  • 1 cup arugula

Instructions

  1. Preheat grill to medium high heat. Place medallions on the grill and cook 3-4 minutes per side. While pork cooks, prepare garlic mayonnaise by adding garlic to the mayo and stirring well.
  2. Once pork is finished, set aside and let rest. Put buns on the grill and toast until golden brown.
  3. Once pork has rested, slice into strips.
  4. To assemble sandwiches, smear buns with garlic mayonnaise, then pieces of pork, bbq sauce, 2 slices of cheddar cheese, red onion, and then top with arugula.
  5. Serve immediately.

    What a really great barbecue recipe for now and for the summer! We do so many hotdogs and hamburgers that a change up in using pork loin will be so welcomed (and yummy!)
