This sandwich is perfect for those busy nights when you have less than half an hour to make dinner. You know, those nights when you are so tempted to call for pizza, but know you should have a home cooked meal for your family. These Garlic and Herb Pork Paninis start with a Smithfield® Roasted Garlic and Herb Sirloin, and then are topped with so many great flavors. They are the perfect solution to the question, so what should I make for dinner tonight?
While the deliciously seasoned pork shines in this sandwich, the sharp cheddar cheese, arugula, crispy bacon, and the garlic mustard aioli aren’t too shabby themselves. I seriously love arugula and put it on so many things. It adds such a delicious peppery bite to your meal and the flavor just can’t be replicated any other way. If you haven’t tried arugula yet, you are missing out! Arugula and bacon are a match made in heaven, trust me.
I love ordering paninis at restaurants, but they are so easy to make at home too! No need for a panini press, a heavy sheet pan or skillet works too! Just lay it on top of your sandwiches and slide it all into the oven to bake! The cheese gets extra melty and your sandwich is nice and squished together so you don’t lose any of that delicious pork! I have been fighting a cold this week and this meal was so comforting. Garlic and Herb Pork Paninis
Ingredients
- 1 Smithfield Roasted Garlic and Herb Sirloin cut into 1/2 inch medallions
- 4 ciabatta rolls
- 4 slices extra sharp white cheddar cheese
- 1 cup spinach and arugula blend
- 8 sliced pre cooked bacon
- 2 tbsp. dijon mustard
- 2 tbsp. mayonnaise
- 1 garlic clove minced
- 1 tbsp. olive oil
Instructions

Preheat oven to 425 degrees.

Heat a large skillet to medium high heat. Add the oil and once hot, add the pork medallions.

Cook 2-3 minutes per side and then set aside. While it is cooking, stir together the mustard, mayonnaise and garlic clove.

Split your ciabatta rolls and spread 1 tbsp. of mustard mixture on the top of each bun. Layer 3-4 pieces of cooked pork on the bottom of each roll, then top with 2 slices of bacon, 1 slice of cheese, and a handful of arugula and spinach.

Put the top of the roll on and put sandwiches on a baking sheet. Top sandwiches with a heavy sheet pan or skillet to press sandwiches down like a panini press would.

Bake 5-8 minutes, or until buns are golden brown and cheese is melted.
