Easy Instant Pot Chicken Scampi Recipe

When I don’t know what to make for dinner, I almost go for chicken and pasta. Chicken and Broccoli with Olive Oil and Garlic is my number 1 go to recipe, but this Instant Pot Chicken Scampi is quickly topping the charts, too! I used to love Shrimp Scampi, but I developed a shellfish allergy in my late twenties, so no more shrimp recipes for me! Chicken is a great substitute for the shrimp, and I still get all the delicious white wine scampi flavors!

Easy Chicken Scampi made in the Instant Pot

 

Scampi sauce is traditionally a garlicy white wine sauce, but to add even more flavor, I throw colored peppers and red onion into the mix. You can also eat more pasta when there’s veggies involved, too 🙂 I am always down for adding more pasta to my plate!

Instant Pot Chicken Scampi

Ingredients

  • 3 chicken breasts pounded thin and cut into strips
  • 1 red bell pepper sliced
  • 1 yellow bell pepper sliced
  • 1/2 red onion sliced
  • 3 cloves of garlic minced
  • 1 cup white wine
  • 1/2 cup chicken broth
  • 1/2 cup flour
  • 2/3 cup half and half
  • 1/2 cup parmesan cheese
  • 1 tsp. salt divided
  • 1/2 tsp. pepper divided
  • 1/2 tsp. Italian seasoning
  • 1/2 tsp. garlic powder
  • 2 tbsp. butter
  • 2 tbsp. olive oil

Instructions

  1. Preheat Instant Pot to saute function.
  2. In a shallow bowl, mix together flour, 1/2 tsp. salt and 1/4 tsp. pepper. Dredge chicken strips through the flour and shake off the excess.
  3. Once Instant Pot function switches to HOT add the butter and olive oil. Add chicken to the pan and brown each side, about 2-3 minutes per side. Turn pot off. Add the onions, peppers, garlic cloves, wine, chicken broth, and the remaining seasonings. Turn pot to manual high pressure and set the timer for 5 minutes. Turn the lid to seal and let cook.
  4. Once 5 minutes is over, do a quick pressure release and open the lid. Remove the chicken, peppers, and onions from the sauce and set aside. Add the half and half and parmesan cheese to the pot and season with additional seasonings to taste. If sauce isn't thick to your liking, turn the pot on the saute function and let sauce cook until thickened, about 5 minutes.
  5. Serve over pasta or rice.

    1. Hi Kris, you could use white cooking wine from the grocery store or you could replace with chicken broth or stock. You will definitely lose some of the flavor though, so you will want to add more garlic and salt and pepper. The wine gives it a flavor punch!
