Easy Phyllo Cups stuffed with Spinach and Artichoke Dip

These puff pastry cups look super fancy and I absolutely love the elegance that they can bring to any recipe. But I have to be honest, these were bought completely by mistake, and it ended up being a great surprise!

I thought I was grabbing traditional puff pastry sheets and when I got home and opened the box, I was shocked to see these cups! I didn’t even know they existed!

These pastry cups bake up in about 18 minutes and the tops literally pop right out!

I sprayed mine with PAM Non-GMO Avocado Oil Cooking Spray before cooking to get those beautiful golden brown tops!

I have been striving to eliminate GMO laden foods from our diet and I love the convenience of and ingredients in the new PAM Non-GMO cooking sprays. They have a Coconut and Olive Oil variety in addition to the Avocado one that I used in this recipe. They all have less than three ingredients, which are all Non – GMO Project verified, so you know exactly what is going in your food.

How many inches across are the pastry cups you used. Are they “one bite” sized?

They are more like 3-4 bites and are around 3 inches wide.

I think fresh would be best but you could sub frozen if you make sure to drain the liquid out really well!

Great idea for a quick appetizer during the holidays! Im going to try using the smaller one bite size “mini” puff pastry cups for an appetizer tray.

Do they go back in the oven when you fill the cups

They do not. I warmed my filling in the microwave before filling. You could put them back in though if you wanted to get them all bubbling, just keep an eye on the pastry so it doesn’t burn!
