If you don’t like your food too spicy, you can leave out the red pepper flakes or switch the spicy Italian sausage for mild sausage. I love a bit of spice in my food but definitely don’t find this too spicy! Make sure to use Italian sausage though for the added seasoning and flavor.

Easy Sausage and Orzo Soup Recipe

Instead of the orzo, you can use ditalini or any super small cut pasta like stars or mini shells. Cheese tortellini would be delicious as well! Use whatever type of pasta that you have on hand, but do substitute rice, as that will take way longer to cook than the pasta!Easy Soup Recipe

  • 1 lb spicy Italian sausage
  • 4 oz orzo pasta
  • 1 28 oz can tomato sauce
  • 1 32 oz container chicken broth
  • 1 yellow onion diced
  • 2 garlic cloves minced
  • 2 cups baby spinach torn stems removed
  • 1/4 cup grated parmesan cheese
  • 1 tsp garlic powder
  • salt and pepper to taste
  • 1/4 tsp red pepper flakes
  • 1 tbsp olive oil

  1. Add oil to a soup pot and heat to medium high heat. When hot, add sausage and onion. Cook until sausage browns. Add garlic and cook for 1 minute, stir to remove anything stuck from the bottom.
  2. Add remaining ingredients, except for spinach and parmesan cheese. Cook over medium heat until orzo is tender, stirring frequently.
  3. Once orzo is tender, add spinach and parmesan cheese. Stir well. Taste for seasoning and add more if desired. Serve hot.
