Spicy Sausage and Orzo Soup
Life is so strange right now, isn’t it? It seems weird to continue on sharing recipes here like everything is normal, but I also don’t want to stop. I know more of you will be cooking at home and I hope to be a resource for easy recipes. Dinner still has to be served, right?

Soup recipes are good for times like these. They are warm and comforting and are relatively inexpensive. You can serve this soup with sandwiches or just crusty rolls, and you will have a filling dinner. Leftovers make for a great lunch the next day as this soup garners even more flavor as it sits!
If you don’t like your food too spicy, you can leave out the red pepper flakes or switch the spicy Italian sausage for mild sausage. I love a bit of spice in my food but definitely don’t find this too spicy! Make sure to use Italian sausage though for the added seasoning and flavor.
Instead of the orzo, you can use ditalini or any super small cut pasta like stars or mini shells. Cheese tortellini would be delicious as well! Use whatever type of pasta that you have on hand, but do substitute rice, as that will take way longer to cook than the pasta!
Spicy Sausage and Orzo Soup
This easy soup recipe only uses a few ingredients and packs a big flavor punch!
Ingredients
- 1 lb spicy Italian sausage
- 4 oz orzo pasta
- 1 28 oz can tomato sauce
- 1 32 oz container chicken broth
- 1 yellow onion diced
- 2 garlic cloves minced
- 2 cups baby spinach torn stems removed
- 1/4 cup grated parmesan cheese
- 1 tsp garlic powder
- salt and pepper to taste
- 1/4 tsp red pepper flakes
- 1 tbsp olive oil
Instructions

Add oil to a soup pot and heat to medium high heat. When hot, add sausage and onion. Cook until sausage browns. Add garlic and cook for 1 minute, stir to remove anything stuck from the bottom.

Add remaining ingredients, except for spinach and parmesan cheese. Cook over medium heat until orzo is tender, stirring frequently.

Once orzo is tender, add spinach and parmesan cheese. Stir well. Taste for seasoning and add more if desired. Serve hot.
