Easy and Cheesy Cheeseburger Quesadillas

An easy, cheesy dinner, your family will love these Cheeseburger Quesadillas!
 Cheeseburger Quesadilla
Feliz Cinco de Mayo! As a Spanish teacher, I am always excited about this holiday and I love getting into the festive spirit both in my classroom and in my kitchen. I wanted to make something with a Mexican flare for dinner, but did not have time to run to the store for the typical ingredients. Quesadillas are always an easy and quick meal so I set out to create something using flour tortillas. After a quick search through my fridge, I found all the typical cheeseburger ingredients and then it hit me! Lose the bun and put it in quesadilla form! 
Cheeseburger Quesadillas
These are so quick, easy, and delicious! My toddler gobbled up two of these and asked for another the next day at lunch. Since these were so good, I can’t wait to see what else I can stuff between a tortilla and smother with cheese! 
 
If you are looking for a quick semi-Mexican, try this tonight! 
 
Cheeseburger Quesadillas 
 
Ingredients:
 
3/4 lb. lean or extra lean ground beef 
10 small taco sized tortillas 
1 tsp. salt 
1/2 tsp. pepper 
1/2 tsp. garlic 
1/3 cup ketchup 
1 tbsp. spicy brown of regular mustard 
1tbsp. Worchestire sauce 
 
Toppings:
2 tomatoes, diced 
1/2 cup pickles, diced 
1 onion, raw or cooked before hand 
8 oz
cheddar or Mexican cheese, shredded 
 
In a skillet, brown meat over medium high heat until browned. Add seasonings and then ketchup, mustard, and Worcestershire sauce. Stir to combine and then remove from heat so it doesn’t over cook. 
 
Spray another skillet with cooking spray and then preheat to medium heat. Lay one tortilla in the pan and cover with cheese, then meat, then toppings, and then cheese again. Lay another tortilla on top and press slightly to seal. Cook until golden brown, about 4 minutes, then flip and cook the other side. Serve with additional ketchup or mustard and enjoy!
