Cereal Milk Lucky Charms Cupcakes

Themed desserts are so fun! These Lucky Charms Cupcakes are not only delicious but are so fun and festive and perfect for St. Patrick’s Day or any cereal lover! What is your favorite cereal? My family could eat cereal everyday and I don’t know if they could pick a favorite, but this would definitely be high on the list! Our local grocery store sells bags of just the marshmallows and they are a yummy sweet snack.

There is nothing wrong with using a cake mix to make cupcakes, but every once in a while, I like to bake completely from scratch. This recipe is unique in that it uses both oil and butter in the ingredients. You will whisk together a flour mixture, then in a separate bowl, beat together the butter, oil, and sugar until well combined. Finally, you will beat together the eggs, milk, and vanilla. They all get combined then placed in regular-size muffin cups (you will need two muffin pans!) and then baked.

Cereal milk makes these cupcakes and frosting super unique! You know the yummy milk left in the bottom of your cereal bowl? It’s so good, so why not use it?! You are going to toast your cereal in the oven (without the marshmallows), let it cool, and then soak it in milk for 15 minutes. After 15 minutes, you are going to toss the cereal but keep the milk. This recipe calls for 2 cups of milk, but you won’t use it all in the final recipe. A lot of it will soak into the cereal, so you are really ending up with a little over a cup and that will be split between the cupcake batter and the icing.

Ingredients

Cake Ingredients:

  • 3 cups Lucky Charms separate cereal from marshmallows
  • 2 cups Milk *only 3/4 of the milk to be used in the batter
  • 1 1/4 cups All-Purpose Flour
  • 1 1/4 teaspoons Baking Powder
  • 1 Tablespoon Cornstarch
  • 1/4 teaspoons Salt
  • 1/2 cup Unsalted Butter softened
  • 2 Tablespoons Canola Oil
  • 3/4 cup White Sugar
  • 2 large Eggs room temperature
  • 2 teaspoons Vanilla Extract

Frosting Ingredients:

  • 1/2 cup Butter softened
  • 3-4 cups Powdered Sugar
  • 2 Tablespoons Cereal Milk* made ahead of time
  • 1 teaspoon Vanilla Extract
  • Rainbow Sprinkles and Marshmallows as desired

Instructions

  1. Preheat oven to 300F.
  2. Spread the Lucky Charms cereal (no marshmallows) onto a lined baking sheet and bake for 15 minutes, stirring halfway. Allow cereal to cool.
  3. Place the cooled cereal and milk in a large bowl and allow to soak for 15 minutes.
  4. Drain and save the milk and discard the cereal.
  5. Preheat oven to 350F.
  6. Line one and a half muffin trays with cupcake liners and set aside.
  7. In a small bowl, whisk together the flour, baking powder, cornstarch and salt. Set aside.
  8. In a large bowl, beat together the butter, oil and sugar for 2 minutes until light-colored.
  9. Beat in the eggs, vanilla extract and 3/4 cup of the reserved cereal milk.
  10. Beat in the dry ingredients until just incorporated.
  11. Scoop the cupcake batter into the prepared liners using a 1/3 cup measuring cup and bake for 24-28 minutes, until an inserted toothpick comes out clean.
  12. Allow the cupcake to cool completely before frosting.
  13. In a large bowl, beat together the butter, 3 cups of the powdered sugar, 2 Tablespoons of the cereal milk and the vanilla extract. Beat for 2 minutes before adjusting the texture with additional powdered sugar, if needed.
  14. Scoop the frosting into a piping bag fit with a large star tip.
  15. Make dollops of frosting along the edge of each cupcake to create little star bursts, then make a small swirl of frosting in the center of each cupcake.
  16. Garnish with Lucky Charms marshmallows and sprinkles.
