My husband recently celebrated his birthday and my daughter declared that Daddy must have a Big Hero 6 birthday! She bought him the movie and insisted that I make a coordinating birthday cake! While I would have loved to create a fancy birthday cake decorated with all of her favorite characters, I am just not talented enough for that, so I settled for just Baymax cupcakes, which turned out really cute. These were so easy, too!
If you haven’t seen Big Hero 6 yet, you need to! It is the cutest kid’s movie and I know that both my husband and I laugh the whole way through it! It also provides a nice break from all of the princess movies in our house.
To make these cupcakes you only need four things. Cupcakes, a black tube of gel icing, toothpicks, and large marshmallows. After you make and frost your cupcakes, lay out your marshmallows. Using your icing tube, draw one dot on the side of the marshmallow. Using your tooth pick, drag the icing front the dot across the marshmallow to make a straight line. After you have your line, draw another dot on the other side to connect. I had to do a couple marshmallows until I got them perfect. Let the gel icing dry for a few minutes, and then squish the marshmallow down onto the cupcake. And that’s it! Easy peasy!
These cupcakes were my ¨signature” cupcake, which is a strawberries and cream cupcake that I have been making for years. They are a dressed up cake mix, stuffed with strawberry preserves and then topped with a tangy cream cheese frosting. Cream cheese frosting is softer than buttercream, so it is perfect for squishing a marshmallow into it!
