Antipasto Pasta Salad is an oxymoron isn’t it? The whole point of an antipasto salad is that it’s anti-pasta! No pasta allowed! But come on, everything is better with pasta right? If you have been reading this blog for a while now, you know that I love pasta and have shared so many delicious pasta salad recipes here. Every year I tell myself that maybe I will expand into doing more potato salads or another summertime salad, but nope, I just keep making pasta salads. #sorrynotsorry

So what makes this antipasto pasta salad so good? Well, its incredibly easy due to a fun shortcut I took! Instead of buying tons of jars of peppers, artichokes, olives, and then dicing up a ton of cheese, I just went to the antipasto bar at my grocery store! I guarantee your store has one and it’s way cheaper and easier than buying all the ingredients separately! And since the veggies and meats are all marinated, the dressing is already made for you too!  So basically, all you have to do is boil the pasta and then dump in the antipasto items.

I picked my favorites from the antipasto bar, marinated artichokes and peppers, baby fresh mozzarella balls, and lots of salty olives. Pick whatever you like! You could leave out the meat and make it vegetarian or forgo the cheese too and have a vegan pasta salad recipe!

How to make Antipasto Pasta Salad

Antipasto Pasta Salad

This incredibly easy Antipasto Pasta Salad is the perfect summer salad because it involves barely any cooking! Use my antipasto bar shortcut to make this an easy salad recipe!

Ingredients

  • 1 lb medium shell noodles
  • 2 pounds antipasto mix with at least 1/2 cup marinade some examples below
  • 1/2 pound Genoa salami
  • 1/2 pound mozzarella cheese
  • 1/2 cup olives
  • 1 pepper red green or yellow
  • 1/2 cup Italian dressing add more as needed
  • 1 cup chopped cherry tomatoes
  • 1 tsp salt
  • 1 tsp garlic powder
  • 1/2 tsp pepper

Instructions

  1. Boil pasta according to instructions for al dente. Drain and let cook for 5-10 minutes.
  2. Add antipasto mixture and all the marinade to a large mixing bowl. Add pasta and stir well. Add seasonings and stir again
  3. Cover and refrigerate for at least one hour.
  4. Before serving, stir again really well and add more seasoning if desired. Serve cold or at room temperature.

Recipe Notes If you do not get a lot of the marinade when purchasing the antipasto mix, substitute an oil and vinegar dressing or any Italian dressing that you like.
