I am always looking to take the classic appetizer recipes and turn them into something unique. This recipe is a play on the ever so famous spinach and artichoke dip recipe, and honestly, this may be even better!

Everyone seems to love spinach and artichoke dip, and I am no different. Spinach and artichokes make a delicious pairing and when you throw in three cheeses, swiss, cream, and parmesan, then you have an even better combination! Puff pastry is one of my favorite products to use when making appetizers. It instantly elevates any recipe.

Easy Phyllo Cups stuffed with Spinach and Artichoke Dip

These puff pastry cups look super fancy and I absolutely love the elegance that they can bring to any recipe. But I have to be honest, these were bought completely by mistake, and it ended up being a great surprise! I thought I was buying the traditional rolls of puff pastry but grabbed these by accident.

 

These pastry cups bake up in about 18 minutes and the tops literally pop right out! If you don’t want to make spinach and artichoke dip, you could fill these with so many other fun things, cranberry and brie would be delicious for the holidays!

I sprayed mine with PAM Non-GMO Avocado Oil Cooking Spray before cooking to get those beautiful golden brown tops! You could also brush with an egg wash which is just egg mixed with a little bit of water then brushed on with a pastry brush.

These delicious Spinach and Artichoke Puff Pastry Cups are an elegant, but easy appetizer for your holiday parties!

Ingredients

  • 2 packs puff pastry cups keep frozen
  • 8 oz cream cheese room temperature
  • 2 cups torn baby spinach
  • 8 oz marinated artichokes, chopped
  • 1 cup shredded swiss cheese
  • 1/2 cup shredded parmesan cheese reserve 1 tbsp
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1/4 tsp garlic powder
  • PAM Non-GMO Avocado Oil Cooking Spray

Instructions

  1. Preheat oven to 425 degrees. Spray a sheet pan with PAM Non-GMO Avocado Oil Cooking Spray and then lay puff pastry cups on the pan. Spray tops and place in oven. Bake for 18 minutes, or until golden brown. When done, remove from oven and set on a cooling rack. After 5 minutes, remove top.

  2. In a mixing bowl, mix together cream cheese, spinach, artichokes, swiss cheese, and parmesan cheese. Stir well until well combined and then add seasonings. While puffs are cooling, microwave mixture for 2 minutes and then stir well.

  3. Add spinach mixture to the cups. Sprinkle with parmesan cheese.

Recipe Notes

Make Ahead Instructions:

Make cups as instructed and set aside, uncovered until ready to serve. 

Make spinach mixture and refridgerate until ready to serve. Microwave for two minutes before filling cups.

    1. I think fresh would be best but you could sub frozen if you make sure to drain the liquid out really well!

  1. Great idea for a quick appetizer during the holidays! Im going to try using the smaller one bite size “mini” puff pastry cups for an appetizer tray.

    1. They do not. I warmed my filling in the microwave before filling. You could put them back in though if you wanted to get them all bubbling, just keep an eye on the pastry so it doesn’t burn!
