Spicy Cheddar Corn Casserole

There is something about a corn casserole that is so good. I love biting into corn with a creamy sauce and savoring every bite. This corn casserole is extra special because it has fresh jalapeños that really take the classic corn casserole recipe from boring to super delicious!

For Christmas, we always eat at my aunt’s house and everyone pitches in and brings a dish or two. I’ve told you before that our big crazy Lebanese family isn’t super traditional eaters, so instead of ham and scalloped potatoes, we all just bring our favorite dishes and eat up! My cousin always bring a spicy jalapeno corn casserole that is SO good and so creamy. My version is a play on her’s, with the same spicy flavors, but a little more cheesy.

What type of corn to use in a corn casserole?

You can honestly use all different types of corn. Fresh corn off the cob is going to be the best, but frozen and canned also work well!

I think the fresh peppers and corn scream late summertime in this recipe, but this is also great for holidays! If you freeze fresh corn in the summer, this is a great recipe to throw those frozen bags of corn into. If you don’t like spicy food, you can substitute the jalapeno for a smoky poblano or for even milder taste, use green chiles.

This Spicy Cheddar Corn Casserole will become a family favorite, just like it has become one in ours! The spicy peppers mix so well with the sweet corn and the creamy cheese!

Spicy Cheddar Corn Casserole

This easy Spicy Cheddar Corn Casserole is the perfect side dish recipe for any dinner!

Ingredients

  • 12 oz corn cook in microwave according to package directions if using a frozen bag
  • 4 oz cream cheese room temperature
  • 1 tbsp milk
  • 4 oz sharp cheddar cheese shredded
  • 2 jalapenos seeded and diced
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1/4 tsp garic powder

Instructions

  1. Preheat oven to 375 degrees.
  2. In a mixing bowl, add cream cheese, milk, cheddar cheese, and jalapenos. Stir well.
  3. Steam corn according to directions and then add to the mixing bowl. Mix well.
  4. Add to a casserole dish and bake for 20 minutes, or until bubbling. Serve hot.

Recipe Notes

This size casserole is enough to serve 2-3 as a side dish. If you are serving more, this recipe should be doubled.
