I think I’ve said it here before, but I am really not the best baker. I can put together some pretty great desserts, but baking isn’t my thing. I hate following recipes and being concise in the kitchen, so baking isn’t my forte. I love a no bake dessert (especially this new recipe for a no bake cookie peanut butter pie!) and even better, I love a semi-homemade dessert like this No Bake Almond Joy Pound Cake! You use a frozen pound cake, so it is so simple and easy. I used a frozen pound cake to make this Banana Split Ice Cream Cake last year, and it is such a good base, that I would never go back to making a pound cake from scratch.

A few years ago I made Almond Joy Cookies for Christmas time and they were a really big hit. I made them again the following Christmas and they won a best cookie award at a cookie exchange! Everyone loved the combination of the shortbread base, sweet coconut, and salty almond that was then drowned in chocolate. I haven’t made those cookies in a few years (mostly because I can’t stop eating them) but this cake was inspired by those delicious cookies.

This cake turned out just like I had hoped. It was incredibly easy, involved no cooking, and everyone loved it. I know that coconut is something that you either love or hate, but I definitely love it and couldn’t stop eating the coconut creme mixture before I spread it on the cake, so good!!

This cake looks super impressive, so if you are trying to make a good impression, this is the dessert to bring! The coconut mixture and chocolate seeps over the sides of the cake and makes a beautiful drizzle!

Once you drizzle on the chocolate, it starts off soft and then forms into a hard shell. While this does make it a little difficult to cut, it gives the exact look of the Almond Joy Candy Bar! Just use a super sharp knife and make quick cuts and you’ll be okay. If you prefer a soften chocolate, mix in a tbsp. of heavy cream before melting your chocolate to have a soften ganache.

Cut this cake into slices and even the inside looks impressive! Soft and chewy pound cake with crunchy chocolate on the top! Candy bar perfection!

No Bake Almond Joy Pound Cake

Ingredients

  • 1 frozen pound cake
  • 2 cups of sweetened flaked coconut
  • 7 oz. of sweetened condensed milk
  • ½ cup whole almonds
  • 1 cup milk chocolate chips
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Remove pound cake from the container and let defrost for 10-15 minutes. Place on a piece of parchment paper or a baking sheet to catch the drips from the chocolate.
  2. In a medium bowl, mix together the coconut flakes and the condensed milk. Mix until all the coconut is wet and sticky. Spread mixture onto the top of the pound cake.
  3. Lay almonds across the top of the cake, pushing them slightly down into the coconut mixture so they stick.
  4. In a small microwave safe bowl with a spout, add both types of chocolate chips. Cook in the microwave, for 30 seconds at a time, stirring after each time. Microwave until melted. It took a total of about 2 minutes for mine.
  5. Drizzle chocolate over the cake and use a spatula to spread.
  6. Let cake sit for at least 1 one hour, or until chocolate sets back up.
