Many people across the country will be turning to meatless meals for the next couple of weeks, so I wanted to share some of my favorites with you! My family is Orthodox, so our fasting rules are quite different than most religions, but the principal of eliminating of meat is the same, so I am no stranger to cooking without any meat. Throughout the entire year, I try to prepare at least 1-2 vegetarian meals a week for our family. Eating less meat is healthier and much cheaper, and challenges me to introduce protein into our meals in other ways. I have found a lot of meatless meals that we have enjoyed along the way and I wanted to share some with you.  I find that a lot of people don’t know where to turn when they aren’t eating meat, so I hope this round up inspires you! I will be sharing more meatless meals of my own during Lent as well and I hope you enjoy them!
