I know that everyone loves breakfast recipes, but, you know what I don’t love? Getting up early to make breakfast! I, admittedly, love to sleep in, so having a hot breakfast on the table before people get up is not something I excel at. I definitely prefer the make-ahead route, and if I can make it the night before and let it cook while I sleep, even better!

This slow cooker ham and cheese breakfast casserole is also perfect for making after the holidays when you have leftover ham! Just cube up your cooked ham and throw it in!

I love that you can see the big beautiful biscuits in this recipe. It is always best to use some type of bread in a breakfast casserole recipe as it soaks up the moisture and adds a delicious light and fluffy texture. Refrigerated biscuits work really well in this recipe because of the slow cook time.

Tips for Making This Slow Cooker Breakfast Casserole Recipe

This is a great dish for using leftover ham but always works great with cooked crumbled bacon or cooked crumbled sausage too!

Use your favorite cheese, pepperjack or swiss would be great in this!

This is actually really good when served with a dollop of salsa. 

If you want to cook on low, increase the cook time to 4 hours. 

Slow Cooker Ham and Cheese Breakfast Casserole

Ingredients

  • 8 count can of grand style refrigerated biscuits
  • 6 eggs
  • 2 cups of shredded cheddar cheese
  • 1 cup diced ham
  • ½ cup milk
  • 2-3 green onions chopped
  • Salt and pepper to taste

Instructions

  1. Spray your slow cooker with some cooking spray.
  2. Cut each biscuit into 4 pieces.
  3. Place the biscuits down the bottom of your slow cooker in as even a layer as possible.
  4. In a large mixing bowl whisk the eggs, milk and salt and pepper together.
  5. Next stir in the cheese, ham and green onions.
  6. Pour the egg mixture over the biscuits.
  7. Cover and cook on high for 1 ½ to 2 hours.
  8. Serve!
