Pasta salad is so easy to make ahead of time and carry along to a picnic or bbq but it is also great for dinner time to go alongside some juicy grilled burgers or steak! I love that it is a make ahead side dish recipe and you can prepare hours before to help minimize stress at dinner time!
I love making big batches of pasta salad to keep in the fridge and eat for lunches during the week! I have a really hard time coming up with lunch time meal ideas since I don’t like sandwiches, so I love having cold, already prepared salads waiting for me when lunch time rolls around!

I mixed up my regular pasta salad routine by switching out the noodles with tortellini and making a tangy red pepper and Parmesan dressing. It is definitely different than the normal picnic salad, and the strong flavors hold up to grilled burgers and hot dogs.
Mini pepperonis are one of my favorite pasta salad ingredients! They add so much flavor and I love how they are bite sized! You could definitely leave the pepperoni out though if you are looking for a vegetarian pasta salad recipe.

Roasted Red Pepper and Parmesan Tortellini Salad
- For the salad:
- 1 lb. refridgerated tortellini any flavor you like
- 8 oz. mozzarella cubed
- 4 oz. mini pepperoni
- 4 oz. sliced black olives
- 1/2 pint cherry tomatoes sliced in half
- 2 jarred roasted red peppers packed in oil diced, reserve the oil
- salt and pepper to taste
- fresh basil for garnish
- For the dressing:
- 3 tbsp. of the roasted red pepper oil
- 1 tbsp. extra virgin olive oil
- 2 tbsp. balsamic vinegar
- 1 tbsp. red wine vinegar
- 3 tbsp. parmesan cheese
Boil pasta according to directions. Set aside and allow to cool.
In a medium sized bowl, add pepperoni, black olives, cheese, tomatoes and red peppers. Add cooled pasta and stir well to distribute.
In a separate bowl, add all dressing ingredients. Whisk together and then taste. Add more vinegar or oil as desired. We like ours tangy, so I usually add a few more dashes of red wine vinegar.
Add dressing to the salad and then stir. Taste and then add salt and pepper to taste.
Refrigerate for at least one hour, but it is better the longer you allow it to chill.
Garnish with basil and then serve cold and enjoy!
