Before I became pregnant with my first daughter, I wasn’t really a dessert person, but by the end of the pregnancy, I was consuming dessert nearly every night! Ice cream, donuts, cake, you name it, I needed it! Well things haven’t changed. I love desserts so much more now than I ever did before and love finishing dinner with a sweet treat.

My most favorite dessert involves anything with chocolate and peanut butter and if that involves ice cream, well then even better. With hot nights around the corner and my lack of motivation to spend much time baking or cleaning up these days, I am always reaching for an easy, no bake dessert and these Mini Chocolate Cake Topped with Peanut Butter Ice Cream Sundaes definitely fit the easy bill!

Mini Peanut Butter and Chocolate Ice Cream Sundaes

These sundaes are so decadent and so delicious. You start with one of my favorite easy, no effort desserts, Duncan Hines Perfect Size for 1 Chocolate Lover’s Cake. These mixes are great and don’t require any effort. They come in a pouch and are made from simple ingredients, you add the liquid of your choice, stir the ingredients in a mug, and in less than two minutes, you have a warm, delicious dessert!

Mini Peanut Butter and Chocolate Ice Cream Sundaes I love the chocolate cake on its own, but you really can’t beat the addition of peanut butter and ice cream! Once the cake is cooked, you top it with a scoop of peanut butter, ice cream, and then all your favorite sundae toppings! How perfect is that?

I call this dessert mini because it is individual sized, but it is definitely not small! This is seriously the perfect summertime treat! So many layers of chocolate, peanut buttery, ice cream goodness! I could use even more peanut butter, but you be the judge!

Mini Peanut Butter and Chocolate Ice Cream Sundaes

Mini Chocolate Cake Topped with Peanut Butter Ice Cream Sundaes

Course Dessert
Prep Time 5 minutes
Cook Time 2 minutes
Total Time 7 minutes
Servings 1

Ingredients

  • 1 Duncan Hines Perfect Size for 1 Chocolate Lover's Cake Pouch
  • 3 tbsp. water
  • 2 tbsp. peanut butter syrup divided
  • 1 tbsp. peanut butter
  • 1-2 heaping scoops of vanilla ice cream
  • whipped cream cherries, peanuts, etc. for topping

Instructions

  1. Drizzle 1 tbsp. peanut butter syrup around the edges of your mug. Then add the cake mix pouch and water. Stir well and cook as directed from the pouch directions.
  2. Once cooked, push the scoop of peanut butter into the middle of the cake.
  3. Let cake cool for 2 minute and then top with ice cream, peanut butter syrup and desired toppings.

    Oh man this looks amazing! I have always had a major sweet tooth, but after my pregnancy with my son it became even worse lol. I want a dessert like daily now, but I try to limit myself.
