One Pot Cheesy Taco Noodles

This One Pot Cheesy Taco Noodles recipe is the ultimate dinner for when you are craving both tacos and pasta! Move over Taco Tuesday beef tacos, this taco mac recipe is going to be your family’s new favorite easy dinner!

One Pan Taco Mac

One Pot Cheesy Taco Noodles are the ultimate comfort food and while you may not think of comfort food during the summer months, this meal is so easy and only dirties one pan, so it is always seasonally appropriate! Our family loves tacos and we love pasta so it is an obvious mash up.

One Pot Cheesy Taco Noodles

While I wish we could grill every night during the hotter months, the reality of where we live is that it rains way more often than not so I need quick, indoor meals as well. My kids are always happy when tacos are on the menu but sometimes I just want pasta! I love this mash up of tacos and pasta and how it satisfies everyones appetites! You can leave out the kidney beans if you aren’t a fan, but my toddler loves them, so I always add them. You can substitute black beans as well, if you prefer!

What type of noodles to use in One Pot Pasta?

A short cut noodle such as shells, elbows, or mini penne are the best for cooking when you are doing a one pot dinner. The other noodles take longer and will absorb more of your liquids. Spaghetti or linguini is long and harder to manage and keep submerged.

What type of pan to use for one pan recipes?

The cast iron enameled pan pictured in this post is my favorite pan to use for one pot meals. The cast iron holds the heat but the enamel makes it non-stick. You will have to stir often though or you will have noodles stick and burn to the bottom of the pan. I love this type of pan because it is also oven safe so you can throw it in the oven if you need to broil or melt cheese!

One Pot Cheesy Taco Noodles

This One Pot Cheesy Taco Noodle recipe is so easy and a crowd pleaser for dinner!

Ingredients

  • 1 lb ground beef
  • 1/2 onion diced
  • 1/2 pepper diced
  • 1 cup salsa
  • 2 8 oz cans tomato sauce
  • 1 can kidney beans drained and rinsed
  • 3 tbsp chili seasoning
  • 2 tsp cumin
  • salt and pepper to taste
  • 1 1/2 cups shredded cheese
  • garnishes additional cheese, green onion, tortilla strips, hot sauce
  • 1/2 lb elbow pasta or shell pasta
  • 1 cup water

Instructions

  1. Add ground beef to a preheated nonstick pan. Add the pepper and onion and cook until ground beef is browned.
  2. Add salsa, tomato sauce, kidney beans, and seasonings. Stir well.
  3. Add the pasta and stir well. Make sure all the noodles are covered by liquid. If they are not covered, add additional salsa, tomato sauce, or water. Cook uncovered, stirring occasionally to prevent sticking. Add water as needed to keep noodles submerged. Let cook for 10-12 minutes, or until noodles are tender.
  4. Add cheese and stir well. Serve immediately with garnishes.
