We love our Instant Pot around here and I am always trying to find new recipes that are amazing. Pulled pork is one of those meals that my family loves, but since I can never remember to turn my crock pot on in the morning, we can never have it during the week because of the long cook time. The Instant Pot is a much better option for us since I can make it in the short time between work and dinner!

My family has always loved pulled pork. My dad makes a delicious recipe with a completely homemade sauce that he lets cook all day. It is definitely the best pulled pork recipe, but this Instant Pot version isn’t too shabby either, especially because I take some short cuts in the sauce!

How to make pulled pork in the Instant Pot?

The key ingredient here is the apple cider vinegar. It serves a dual purpose. First, the acidity in the vinegar helps tenderize the meat, and second, it provides that southern bbq flavor that I love, with a sharp vinegar tang. You will always taste a strong vinegar taste in pulled pork in South Carolina and that is definitely my favorite type of bbq! I look forward to eating it every time that we are in the Carolinas!

You also want to use fattier cuts of pork. Do not use a tenderloin or a center cut roast. It will dry out too quickly in the Instant Pot.

Ingredients

  • 3 lb pork butt or shoulder cut into 4 pieces
  • 1/2 cup chicken broth
  • 1/2 cup apple cider vinegar
  • 2 tbsp brown sugar
  • 1 tbsp dijon mustard
  • 2 tsp salt
  • 1 tsp pepper
  • 1 cup bbq sauce plus more for serving
  • 1 tbsp oil

Instructions

  1. Heat your Instant Pot to saute. Sprinkle your pork with the salt and pepper. Add oil to Instant Pot once it says HOT.
  2. Add pork pieces to the pot. Cook 4-5 minutes on both sides, until browned.
  3. Turn off the saute function. Add brown sugar, mustard, broth, and vinegar. Put lid on and turn to seal. Set timer for 35 minutes. Let cook and when timer beeps, let natural release. (NOTE! If you do not let it naturally release, your meat will be tough!)
  4. Once pressure is released, open the lid and shred the pork. Add bbq sauce and serve as desired.
