Baked Garlic Parmesan French Fries
While I am not a meat and potatoes type of gal, I honestly never turn down a french fry. Especially a crispy baked fry that is topping with garlic, herbs, and freshly shredded parmesan. Seriously, all the best foods in the world combined into one! This is my second french fry recipe this year, so we are definitely on a fry kick here at our house!
I love making baked french fries at home because they round out so many different meals nicely. Burgers, chicken, and even steak pair well with homemade fries! These fries are even fancy enough to serve to guests! Top them with whatever herbs are overflowing in your garden or hanging out in the back of your fridge and you are all set!
What type of potatoes to use for homemade french fries?
I recommend using a starchy Idaho russet potato. While I love Yukon golds, those are best for mashed potatoes and don’t get crispy enough for french fries!
How to get crispy fries in the oven?
My secret trick is to put the sheet pan in the oven while it is preheating. When the potatoes touch the surface of the sheet pan, they immediately crisp up on the outside! You also want to use a metal spatula while flipping these to help ensure that the crispy skin stays intact and doesn’t get stuck to the pan.
How to make Baked Garlic Parmesan French Fries?
After following my perfect baked french fry recipe, you prepare the topping. The topping can be adapted to your likes! I used my favorite herbs and cheese, but you could sub the herbs or even omit the cheese if you wanted! I like to use freshly shredded parmesan, lightly cooked garlic, and basil and parsley.

These Baked Garlic, Herb, and Parmesan French Fries are a delicious way to serve homemade french fries! You won't miss the fryer with this recipe!
- 4 large russet/Idado potatoes cut using a fry cutter or cut in half, then quarted and cut into strips
- 3 tbsp olive oil divided
- 3 garlic cloves minced
- 3 tbsp freshly shredded or shaved parmesan cheese
- 2 tbsp minced fresh herbs, basil, parsley, etc.
- 1 tsp salt
Preheat oven to 425 degrees. Add half the oil to the pan and place in the oven.
While pan heats up, cut potatoes. Once preheated, add to the sheet pan. Be careful as the pan and oil will be HOT!
Salt the potatoes and place in the oven. Do not stir.
Cook for 20 minutes. At the 20 minute mark, carefully flip potatoes using a metal spatula. Make sure you do not rip off the crispy skin. Return to the oven and cook an addition 10 minutes.
While fries cook, add the remaining oil to a small sauce pan. Add garlic and cook 1 minute, or until fragrant. Set aside until potatoes are done.
When fries are done, add to a big serving bowl. Drizzle with garlic oil and then top with herbs and parmesan cheese. Serve immediately.
