These Homemade Golden Oreos are going to be your new favorite cookie recipe. Seriously, what is better than a deliciously light vanilla cookie stuffed with an easy buttercream frosting? Golden Oreos are my cookie weakness, but this homemade version is SO much better than the store bought version!

What are gobs?

Where I live in Western Pennsylvania, we refer to most sandwich cookies as gobs, where as the rest of the world calls them whoopie pies. Traditionally, a gob is a cake like chocolate sandwich cookie, with a light and super sweet vanilla icing between the cookies. There are tons of varieties, but the chocolate is the classic version. While I like gobs, I definitely prefer vanilla sandwich cookies and have been wanting to try my hand at creating the perfect recipe. After some trial and error, I think I nailed it with these cookies!

Does your butter need to be at room temperature for cookies?

Yes! Butter that isn’t at room temperature will make your cookies dense. It is also harder to cream the butter if it is too cold.

If you forgot to take your butter out, you can speed up the room temperature process by cutting it into small cubes.

How to Freeze These Cookies

If you want to freeze these sandwich cookies, I recommend freezing the cookies, unsandwiched, in an airtight container for 1-2 months. Then when you want to serve these cookies, unfreeze and then make the frosting and assemble. You technically can freeze frosting, but I really think it is better to make it fresh.

Ingredients

Cookies

  • 2 cups all-purpose flour
  • 1/3 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter room temperature
  • 1/4 cup granulated sugar
  • 2/3 cup brown sugar
  • 1 egg room temperature
  • 1 teaspoon vanilla extract

Filling

  • 1/4 cup unsalted butter room temperature
  • 1 1/2 cup powdered sugar
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F. Line a baking sheet with parchment paper.
  2. Whisk together flour, baking powder, and salt.
  3. In a large bowl, beat the butter and sugars until light and fluffy. Mix in egg and vanilla.
  4. Add the dry ingredients to the butter mixture, mixing until combined.
  5. Roll the dough into balls. Flatten the balls slightly. Place on the baking sheet at least 2 inches apart.
  6. Bake the cookies for about 8-10 minutes. Let cookies rest on the baking sheet for 5 minutes and then transfer to a wire rack to cool completely.
  7. To make the frosting, mix the butter until creamy and smooth. Mix in powdered sugar and vanilla.
  8. Using a piping bag or a spoon, frost the bottoms of half the cookies, then sandwich with another cookie.
