This easy dinner recipe has some of my favorite things!

Arugula, gouda, bbq sauce, and ranch dressing! So many good things all in one place! I used naan flatbreads for this recipe and you can find them at any grocery store. If you can’t find them, use any flatbread you like or you could even substitute pizza crust. The texture of naan is just so chewy and fluffy and good and are the perfect base for these flatbreads. I remember a few years back when everyone was eating and making bbq chicken pizza. I love it, but this flatbread recipe is definitely a more flavorful update on the classic recipe.

Ingredients

  • 2 chicken breasts
  • 2 naan flatbreads
  • 1/2 cup gouda cheese
  • 1/4 cup cheddar cheese
  • 4 tbsp. bbq sauce
  • 2 tbsp. ranch dressing
  • 1/2 cup arugula
  • 1 red onion sliced thin
  • 1 tbsp. butter
  • salt and pepper to taste
  • 1/2 cup red shredded cabbage

Instructions

  1. Preheat grill to medium high heat. Sprinkle chicken breasts with salt and pepper and grill 4-5 minutes per side, or until cooked through. Remove from grill and set aside. Slice into strips after it rests for a few minutes.
  2. While chicken cooks, melt the butter in a sauce pan and add the onions. Cook until caramelized, about 10-15 minutes. Stir frequently.
  3. Once onions and chicken are done, assemble the flatbreads. Spread the bbq sauce first, top with chicken slices, and then the cheese.
  4. Put on the grill and grill until cheese is melted, about 5 minutes.
  5. Once grilled, remove from the grill and top with the arugula and red cabbage. Drizzle with ranch dressing. Cut into strips and serve immediately.
