I love cookies with a twist and this combination of chocolate and caramel is just so good! This dough comes together quickly and easily and in less than 2o minutes, you have fresh cookies! I love eating them before they cool and the caramel is still gooey!
I was going to save this recipe for Christmas cookie baking but then I realized that new cookie recipes are good any time during the year! Summer picnic season is upon us and someone always brings cookies, right? These are the perfect cookies to take to a bbq or picnic because they are simple and easy but so good! Everyone will be surprised when they bite in and the caramel oozes out!
What do you need to make caramel stuffed chocolate chip cookies?
I love cookie recipes that don’t require a trip to the store and other than the caramels, you probably already have all the ingredients in your pantry!

- white sugar
- baking soda
- chocolate chips
The easiest way to “stuff” these cookies is to use a cookie scoop. Place one scoop on the cookie sheet, place the caramel on top, and then put another scoop of dough on top. Lightly smoosh the two together and that’s it! Since you are using two scoops of dough, these are a bigger cookie!

Caramel Stuffed Chocolate Chip Cookies
These delicious Caramel Stuffed Chocolate Chip Cookies are easy and delicious and will be a crowd favorite!
- 2 1/2 cups flour
- 3/4 cup brown sugar
- 1/4 cup white sugar
- 1 tsp. Baking soda
- 1/4 tsp. Salt
- 1 tsp vanilla
- 1 cup butter softened
- 2 eggs
- 2 cups semi sweet chocolate chips
- 1 package caramels
Preheat oven to 350 degrees F (175 degrees C). Grease or place parchment paper on two baking sheets.
In a medium mixing bowl, add flour, baking soda and salt. Set aside.
With an electric mixer cream butter and sugar until light and fluffy. Add eggs and vanilla and beat well. Add dry ingredients half at a time, until well combined.
Stir in chocolate chips.
Scoop a tablespoon of batter onto baking sheets. Place one caramel on batter. Add a second tablespoon on top and make sure the sides are closed so caramel doesn’t ooze out. Do this with remaining cookies.
Bake 12-14 minutes. Allow to cool 5 minutes before moving to cooling rack to cool completely.
