Let’s welcome monthly contributor Kirsten back again this month sharing a cookie recipe! 

It’s amazing what you find when you dig down to the depths…

Energy (oh my gosh boxes of bathroom tiles are heavy!), patience (whoa… 25 tired kidlets at the moment at work) and passionfruit (!) when I finally cleaned out the freezer :p

Packing up the old house, renovating the new one and still working full time seemed do able… before I started! I am seriously days away from jumping in head first to a whole new world of the unknown. I decided to do all the easy jobs first… and now I am left with ‘the rest’ (I was sooo hoping some magical fairy would come to the rescue and then when a certain someone said he was ‘very busy’… while playing the Xbox and my head was in the oven {cleaning it..it’s not that bad!} I seriously could have choked on my {now cold} coffee…)

So when I found passionfruit that I had frozen and forgotten about… the only logical thing to do was to forget the oven and make cookies.. because, well… there is always time for cookies!

I made these with my Mum’s melting moments recipe in mind. They are creamy, soft and sweet just like little bites of heaven should be. The trick is not to over cook them so they keep their soft texture. You can make a passionfruit icing to drizzle on top, or to use it to sandwich between the cookies (sooo good!)

To make the passionfruit icing I generally use; a cup of confectioners sugar, a teaspoon of vanilla essence, 1 ½ teaspoons softened butter and enough boiling water (added a tablespoon at a time) until the desired consistency is achieved and the butter has melted. If you can’t find fresh passionfruit… you can get passionfruit essence/flavoring that you can use for both the cookies and icing.

Passionfruit Cookies

Prep Time 15 minutes
Cook Time 20 minutes
Total Time 35 minutes
Servings 35 -45 cookies

Ingredients

  • 2 sticks/8 ounces of softened butter not melted
  • 1 cup confectioners sugar sifted
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 2 1/3 cups flour sifted
  • 1/4 cup of passionfruit pulp

Instructions

  1. Preheat the oven to 320 degrees Fahrenheit (fan forced)
  2. Beat the butter until white. Add the confectioners sugar in two sections and beat well each time until the butter and sugar are well combined and creamy.
  3. Add the eggs, passionfruit and vanilla and beat again.
  4. Add the sifted flour and mix gently to form a soft dough- don't over mix.
  5. On a lined baking tray, roll balls of mixture and slightly flatten with your fingers. TIP: the mixture will stick to your hands, to stop this- wet your hands before rolling the mixture. Allow room between cookies for spreading while baking.
  6. Bake for around 18-20 minutes or until slightly golden. Leave to cool a little on the tray before moving or they will break. Cookies will harden as they cool.
