No Bake Chocolate Honeycomb Bars; a crunchy chocolate biscuit base with pockets of sweet honeycomb and a smooth chocolate top. A dangerously easy and quick snack!

I know I just heard a few of you shudder through the internet eather and into my ear- Some of you swore and some fainted with the panic that Christmas is so very close… but for me…
It is my favourite month of the year.

We get a mini holiday here for Melbourne Cup (it is a horse race- yup, a public holiday for a horse race) and even better- it is on a Tuesday. Why is that so wonderful you ask? Well, a lot of people have the Monday off too.. or choose to keep their kiddies home from school, so it has been know to have like 4 students in the grade turn up (whoops… you may have just heard me squeal in excitement through the screen!)

For me… it’s almost as good as a four day weekend  in one of the busiest times of a teacher’s year. It gets EVEN better… 3 weeks later, it is my birthday. Call me a big kid, but I love my birthday… actually, we might as well as call it a festival. I stretch it out as long as I can… anyone else?

I don’t think my birthday last year can be topped… a surprise trip to Bali (I found out a few hours before we flew out!) but it always gives me an excuse to chill from my fairly strict routine and splurge on chocolate, chocolate… oh, and more chocolate (ekkk… somewhere I need to add cheesecake in there… I looove cheesecake)

So, help me celebrate I created something with two things I love: quick, easy recipes and chocolate. Chocolate + honeycomb is even better!
This is such an easy slice to knock up, seriously delicious last minute stuff!

No Bake Chocolate Honeycomb Bars

Ingredients

  • 3.5 oz/100 grams butter -melted
  • 5.3 oz/150 grams Crunchie bars/chocolate covered honeycomb bars - roughly crushed
  • 8.8 oz/250 grams chocolate cookies like Oreos, but without the cream filling - crushed
  • 3/4 cup condensed milk
  • 10.5/300 grams milk chocolate
  • 1 large tablespoon coconut or vegetable oil

Instructions

  1. Roughly crush the honeycomb bars and set aside. Crush the cookies finely and then add to a medium sized bowl.
  2. Add the honeycomb to the cookies and mix to combine.
  3. Melt the butter and then add the condensed milk and mix. Add both to the cookie and honeycomb mixture and mix to combine- it should be a wet mixture.
  4. Line a slice tin (28cm x 18cm or 11? x 7?) with baking paper and push the mixture into the base, compressing well with your hand or the back of a spoon. Place in the fridge.
  5. Meanwhile, melt the chocolate and the vegetable/coconut oil together. Once all melted and smooth, take the base from the fridge and pour the chocolate on top, spreading it evenly on the base. Leave to set in the fridge.
  6. To cut, use a heated knife or leave the slice out of the fridge until softened or the chocolate will crack when you slice it.
  7. Store in an airtight container in the fridge.

  9. Makes: 25-30 pieces. Total time (not including chocolate setting time): 25-30 mins
  10. Please note- Australian cup and spoons used. 3/4 cup = 187ml Tablespoon = 20ml . U.S measurements should be okay, just add a little more condensed milk if the mixture is not sticking together.
