I learned an important lesson when getting this post ready…Mexican food is the absolute ugliest thing to photograph! I hope you don’t judge this recipe by the photo, they really are good!

These tortillas pizzas are so versatile and easy and my two year old gobbles them up, which makes them a big hit in our house! I used what I had on hand for these, whole wheat tortillas, extra lean ground turkey, and fat free sour cream, which make these very healthy, but you would never know because they are still delicious. You can substitute ground beef, chicken, or even black beans for the turkey. I topped ours with lettuce, sour cream, and guacamole, but use whenever your favorite taco toppings are! If you have leftover topping, these make a great filling for a quesadilla the next day!
Mexican Flatbread Pizzas
4 10 inch wheat tortillas
1 lb extra lean ground turkey, beef, or chicken  (you want to use something lean so that the fat doesn’t make the tortilla soggy)
4 oz. shredded cheddar or Monterey Jack
1 pepper, diced
1/2 onion, diced
4 oz. medium salsa
1 tbsp. taco seasoning *
1 tsp. salt
1/2 tsp garlic powder
Toppings, lettuce, tomato, sour cream, guacamole, black olives, jalapeños, etc.
* I make my own taco seasoning and it is salt free. Feel free to use a seasoning packet, but omit the salt from the recipe then.

 

Preheat oven to 400 degrees. When oven is ready, put tortillas in the oven on a cookie sheet for 5 minutes.  This helps your tortillas crisp up before you put the meat mixture on it.
Meanwhile, brown meat over medium heat. Add onions, peppers and seasonings. Cook until meat is no longer  pink. Add salsa and lower heat to low. Let simmer for five minutes.
Once tortillas are brown, spread meat mixture in a thin layer over the tortilla.  Divide cheese between the four tortillas and sprinkle over the meat. Return tortillas to the oven and cook for another five minutes. Watch carefully so that the edges don’t get too brown. Remove from the oven and top with your toppings.
Serve immediately so your crust doesn’t get soggy. Enjoy!
