21 Day Fix Grilled Fish Tostadas

May 19, 2014

21 Day Fix Grilled Fish Tostadas are a delicious, healthy fish recipe that is 21 Day Fix Approved! You will love this light and flavorful easy fish recipe!

Grilled Fish Tostadas, 21 Day Fix and Weight Watchers Recipe21 Day Fix Grilled Fish Tostadas is my new favorite 21 Day Fix Recipe! In an attempt to kick some bad eating habits and to get back into working out, I have been doing the 21 Day Fix. A few of my friends have done it and been very successful, so I wanted to give it a try. I absolutely love the workouts and the diet plan is definitely effective as well, but for someone who absolutely loves to cook, it hasn’t been easy. The plan is simple…you are allocated certain amounts of food in measured out portions and you eat completely clean. As a family, we do our best to eat clean even when I’m not doing the Fix, but this has really forced me to look again at our diets and clean them up even more.

I am not the kind of girl who can eat salads or plain grilled meats everyday, so I needed to spice up dinner and find something really delicious that I could serve to my family, while still staying on plan. These tostadas fit the bill. Healthy, easy, delicious, and satisfying! This is my favorite thing that I have made while doing this diet and I plan on making it many more times this summer!

I love these Healthy Grilled Fish Tostadas because they are so good, even if you aren’t doing the Fix. My husband happily ate up a bunch of these for dinner with no complaints that they tasted healthy!

  3. Fold foil over the fish to make a sealed container.
  4. Grill over medium heat on your grill for 6-8 minutes, depending on the thickness of your fish.
  5. Meanwhile, lay your tortillas flat on a cookie sheet and bake in the preheated oven until completely crisp, but not brown, about 6-8 minutes.
  6. When finished, let cool a minute and then spread with mashed avocado or guacamole (if doing the 21 Day Fix, use only the amount that fits in your blue container.)
  7. When fish is ready, flake apart with two forks and then spread on top of guacamole. Top with salsa from the foil packet and then garnish with any desired toppings, enjoy!

Hi Jenn! I double checked with my coach and she counts salsa, as long as its the good stuff just made with tomatoes, onions, and peppers as a vegetable, so that would be green. But I don’t see why you couldn’t count it as purple instead, since tomatoes are considered a fruit. Thanks for commenting!

Have you ever baked the fish in the foil packs instead of grilling? If you have, what temp and for how long? Thanks in advance!

Hi Savanna! I haven´t tried it myself, but I can see that working wonderfully! I would bake them for about 8-10 minutes at 400 degrees, depending on the thickness of your fish. If it is thin, I think that 8-10 minutes should be plenty of time, if it is thicker, then increase the time!

I am about to try this recipe but I have no stove just a flat top griddle so this should be interesting. It looks yummy, wish me luck!!!!

I bet that will work! You won’t get the smoky grill flavor, but it should still taste good!!
