Easy Sheet Pan Chicken Fajitas are everything I love about an easy chicken dinner. I usually have all the ingredients on hand, it takes minimal ingredients and prep work, and everyone loves it! It pairs so well with Success® Boil-in-Bag White Rice which is the perfect base at the bottom of your fajita bowl! A layer of rice soaks up all the deliciousness and you can then top your bowl with whatever you like!

There are three essential fajita ingredients – onions, peppers, and meat. I throw all three ingredients on a sheet pan with seasoning and let the oven do its magic! Everything cooks so well together and I love how the juices run out of the peppers and onions and marinate the chicken.
All that saucy goodness gets poured over the rice and then topped with your favorite fajita toppings. I like cheese and sour cream, but add whatever you like! Guacamole, tomatoes, salsa, avocado slices, the toppings are endless! Add a squeeze of lime and you are ready to eat!
I don’t like to mess around in the kitchen too much in the summer, so the Success® Boil-in-Bag White Rice is the perfect side dish for so many meals. Sheet Pan Chicken Fajitas
These Sheet Pan Chicken Fajitas are so easy and so delicious and make an incredible chicken dinner that your entire family will love!
- 2 lbs chicken tenders
- 1 bag Success® Boil-in-Bag White Rice
- 3 colored peppers sliced
- 1 red onion sliced
- 2 tbsp olive oil
- 2 tsp chili powder
- 1 tsp cumin
- 1 tsp salt
- ½ tsp pepper
- ½ tsp garlic powder
- ½ tsp onion powder
- ½ tsp Mexican oregano
- Optional: desired toppings
Preheat oven to 375 degrees.
Place chicken, peppers, and onions on a sheet pan. Drizzle with olive oil then top with all the seasonings. Stir to combine.
Bake in oven for 15 minutes, then remove and stir. Return to oven for another 5 minutes, or until chicken is cooked through.
While chicken cooks, prepare rice according to package instructions/
When everything is finished, place rice in a bowl and top with chicken and vegetables. Top with additional toppings and a squeeze of lime.
