I had recently been contacted by Gourmet Warehouse to see if I wanted to try their products and if so, would I be willing to create some recipes using their gourmet marinades, spice rubs, and sauces. I absolutely love BBQ so I enthusiastically said yes!! Gourmet Warehouse is a small company based in Hilton Head, South Carolina that produces handcrafted gourmet BBQ products. I received a few different products in the mail and was so excited to try them!

The first I decided to try was the Sesame Ginger Marinade and as soon as I opened the bottle, I knew I had a winner! The smell was mouth-watering! The product label said it can be used on seafood, chicken, or beef, and since I had chicken defrosting, I decided to go that route. Since it was the end of the week, I also had odds and ends hanging about in my fridge…cut up veggies, leftover rice, and some grilled button mushrooms. Leftover rice never has the same fluffy quality to it the next day, but what it lacks in fluffiness, it makes up in its ability to make the most delicious fried rice!

This dinner only took about 15 minutes from start to finish, and it blew me away. It was SO flavorful and delicious! It required no seasoning at all due to the great flavor in the marinade. Since this dish turned out so well, I cannot wait to try more of my Gourmet Warehouse Products!

Sesame Ginger Chicken Fried Rice

Ingredients

  • 2 chicken breasts cut into bite sized pieces, marinated for 2-4 hours in Sesame Ginger Marinade*
  • 2 cups left over or fresh rice
  • 1 yellow or red pepper diced
  • 1/2 cup chopped carrots
  • 1/2 cup chopped celery
  • 1 small onion diced
  • 4. oz sweet corn
  • 2-3 tsp. soy sauce
  • 2 eggs
  • 2 tbsp. oil
  • Optional:
  • Any leftover veggie you have: mushrooms broccoli, asparagus, or peas would all be delicious
  • *If you do not have the Sesame Ginger Marinade you could make your own using the same flavors or any other Asian marinade or sauce you like!

Instructions

  1. In a heavy bottom pan or wok, heat 2 tbsp. oil until very hot.
  2. Add chicken and marinade to the pan. Put veggies on top of chicken and let cook for 1-2 minutes, without stirring.
  3. Once the veggies start to soften, begin stirring. Add rice and soy sauce and continue to stir. Stir and cook for 3-4 minutes.
  4. While cooking, crack the two eggs and scramble them in a small bowl. Add them to the pan and continually stir until you can see that the egg is completely cooked.
  5. Remove from heat and serve immediately. Enjoy!
