Pina Colada Smoothie

 I am not normally a summer person. I adore fall and everything it has to offer. But this year, something is different. For the first time, I find myself relishing the summer warmth, dreading its end. Maybe it’s the cooler weather that’s been lingering around or the late night walks I’ve been taking to our local beach. There’s been a lot of pool lounging, frozen yogurt trips, sunny day parties. I don’t want it to end this time. And so I am trying to drag it out as much as possible by whipping up fun, summer-themed treats. This piña colada chia smoothie has been my life-blood this season. I can’t drink enough of them, downing each one in a split second. It’s a simple recipe, just a few ingredients but they make all the difference in achieving a super creamy, sweet smoothie.
Pina Colada SmoothieHere, I opted for unsweetened coconut milk. I debated about using a sweetened version but honestly, if you use a ripe enough banana, it will be sweet on its own. The coconut milk gives a nice heft to the smoothie in addition to a really welcomed creaminess. And of course, it wouldn’t be a piña colada with out some pineapple. That tropical, bright flavor is bold and sweet with just a tiny kick of tart. To. Die. For. This smoothie is absolutely meant for poolside sipping!

 Piña Colada Smoothie

Ingredients:

1 banana
1 cup pineapple, frozen
3/4 cup coconut milk
2 tsp. chia seeds
1 cup ice

Combine ingredients in a blender and blend until very smooth. Top with flakes of coconut if you choose.
