Cranberry and White Chocolate Pink Velvet Cookies

Ingredients

  • 1 pink velvet cake mix
  • 1 tsp. baking powder
  • 2 eggs
  • 1/3 cup canola oil
  • 1/2 cup white chocolate chips
  • 3/4 cup dried cranberries

Instructions

  1. Preheat oven to 350 degrees and line two baking sheets with parchment paper or silpats.
  2. In a large mixing bowl, add cake mix, baking powder, eggs, and canola oil. Stir until all the mix is moistened.
  3. Fold in the chocolate chips and cranberries until evenly distributed.
  4. Scoop rounded tablespoons onto your baking sheet.
  5. Bake 9-11 minutes or until lightly browned.
  6. Let sit for five minutes on the baking sheet before moving to a cooling rack.
  7. Store for up to one week in an airtight container or freeze for one month.
