Spicy Sausage and Orzo Soup

This easy soup recipe only uses a few ingredients and packs a big flavor punch!

  • 1 lb spicy Italian sausage
  • 4 oz orzo pasta
  • 1 28 oz can tomato sauce
  • 1 32 oz container chicken broth
  • 1 yellow onion diced
  • 2 garlic cloves minced
  • 2 cups baby spinach torn stems removed
  • 1/4 cup grated parmesan cheese
  • 1 tsp garlic powder
  • salt and pepper to taste
  • 1/4 tsp red pepper flakes
  • 1 tbsp olive oil


  1. Add oil to a soup pot and heat to medium high heat. When hot, add sausage and onion. Cook until sausage browns. Add garlic and cook for 1 minute, stir to remove anything stuck from the bottom.
  2. Add remaining ingredients, except for spinach and parmesan cheese. Cook over medium heat until orzo is tender, stirring frequently.
  3. Once orzo is tender, add spinach and parmesan cheese. Stir well. Taste for seasoning and add more if desired. Serve hot.
