Caramel Stuffed Chocolate Chip Cookies

  • 2 1/2 cups flour
  • 3/4 cup brown sugar
  • 1/4 cup white sugar
  • 1 tsp. Baking soda
  • 1/4 tsp. Salt
  • 1 tsp vanilla
  • 1 cup butter softened
  • 2 eggs
  • 2 cups semi sweet chocolate chips
  • 1 package caramels


  1. Preheat oven to 350 degrees F (175 degrees C). Grease or place parchment paper on two baking sheets.
  2. In a medium mixing bowl, add flour, baking soda and salt. Set aside.
  3. With an electric mixer cream butter and sugar until light and fluffy. Add eggs and vanilla and beat well. Add dry ingredients half at a time, until well combined.
  4. Stir in chocolate chips.
  5. Scoop a tablespoon of batter onto baking sheets. Place one caramel on batter. Add a second tablespoon on top and make sure the sides are closed so caramel doesn’t ooze out. Do this with remaining cookies.
  6. Bake 12-14 minutes. Allow to cool 5 minutes before moving to cooling rack to cool completely.
