Air Fryer Cheesy Corn Fritters

These Air Fryer Cheesy Corn Fritters are delicious, easy, and lower on calories than a traditional corn fritter!

Ingredients

  • 1 cup corn stripped off the cob
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup panko breadcrumbs
  • 1 tbsp flour
  • 1 egg
  • 3 green onions diced
  • 1 tbsp mayonnaise, sour cream, or greek yogurt
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder

Instructions

  1. Preheat air fryer to 375 degrees.

  2. Mix together all fritter ingredients in a mixing bowl. Make sure it is well combined but don't overmix. If the mixture is too dry, add additional mayonnaise or sour cream. If it is too wet, add a little bit of flour at a time. You should have a sticky consistency.

  3. Using either a tablespoon or a cookie scoop to form tablespoon sized balls of mixture. Flatten with the palm of your hand into a disc. Place in hot air fryer and cook for 8 minutes, flipping at the 4 minute mark.

  4. Serve immediately with desired dipping sauce.
