Sheet Pan Chicken Fajitas

These Sheet Pan Chicken Fajitas are so easy and so delicious and make an incredible chicken dinner that your entire family will love!

Ingredients

  • 2 lbs chicken tenders
  • 1 bag Success® Boil-in-Bag White Rice
  • 3 colored peppers sliced
  • 1 red onion sliced
  • 2 tbsp olive oil
  • 2 tsp chili powder
  • 1 tsp cumin
  • 1 tsp salt
  • ½ tsp pepper
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp Mexican oregano
  • Optional: desired toppings

Instructions

  1. Preheat oven to 375 degrees.
  2. Place chicken, peppers, and onions on a sheet pan. Drizzle with olive oil then top with all the seasonings. Stir to combine.
  3. Bake in oven for 15 minutes, then remove and stir. Return to oven for another 5 minutes, or until chicken is cooked through.
  4. While chicken cooks, prepare rice according to package instructions/
  5. When everything is finished, place rice in a bowl and top with chicken and vegetables. Top with additional toppings and a squeeze of lime.
