Instant Pot Creamy Mexican Chicken

This Instant Pot Creamy Mexican Chicken is perfect for tacos, enchiladas, or nachos!

Ingredients

  • 1 1/2 lbs chicken tenders
  • 1 1/2 cups salsa
  • 4 oz cream cheese
  • 1/4 cup sour cream
  • juice 1 lime
  • 2 tbsp taco seasoning
  • 1/4 cup water

Instructions

  1. Season chicken with taco seasoning. Add chicken to the Instant Pot.

  2. Add salsa and water to the Instant Pot. Set cook to manual or pressure cook. Set timer for 10 minutes. Let cook and then naturally release pressure.

  3. Once pressure is released, switch to saute. Add cream cheese and stir until melted.

  4. Shred chicken with two forks or a hand mixer.

  5. Add sour cream and lime juice and serve as desired.
