Easy Chicken Pad Thai

Ingredients

  • 12 oz rice stick noodles
  • 1 lb thinly sliced chicken breast
  • 1 cup homemade or store bought pad thai sauce see link in post for homemade
  • 1 egg
  • 1/4 cup chopped peanuts
  • 1/4 cup green onions
  • 2 tbsp canola oil
  • 1/4 tsp salt
  • 1/4 tsp garlic powder
  • 1 lime

Instructions

  1. Fill a pot with water and turn heat to high. When water boils, add rice stick noodles. Cook 5-6 minutes, or until tender, but still has a bite. Drain and set aside.
  2. While noodles cook, add oil to a large skillet and heat to medium/high heat. Sprinkle salt and garlic powder on the chicken and then add to pan once hot. Cook on both sides, 3-4 minutes, or until cooked through. Remove from pan.
  3. After chicken is removed, crack an egg into the pan. Let cook for 1 minute, then scramble into large pieces. Add noodles and sauce to the pan. Toss until all is well coated. Let noodles slightly stick to pan, so get that "fried" texture, and then continue to stir for 1 to 2 minutes. Add chicken and then garnish with peanuts and green onions. Squeeze juice of 1 lime over the top.
