Crunchy Ramen Noodle Salad

This Crunchy Ramen Noodle Salad is an easy summer side dish recipe, bursting with flavor and texture!

Ingredients

  • 1 bag cole slaw mix
  • 1 bag Asian Salad Blend a mix of cabbage, green onions, cilantro, almonds, etc.
  • 2 packs Ramen noodles chicken flavored
  • 1/2 cup chopped green onions
  • 1/2 cup sunflower seeds
  • Dressing: This is really just a starting point for amounts. Taste and add more as you go
  • 1/3 cup canola oil
  • 1/3 cup white vinegar
  • 1/3 cup rice wine vinegar
  • 2 tbsp. sugar plus more to taste
  • 1 Ramen seasoning packet

Instructions

  1. Mix all salad ingredients, except for ramen noodles, together in a bowl.
  2. Using your hands, crush noodles into pieces into the salad. I like to have a combination of small noodles and big chunks for a variety in texture. 
  3. In a separate bowl, whisk together dressing ingredients. Taste and adjust sweetness. If too sweet for your taste, add more vinegar. If not sweet enough, slowly increase sugar. 
  4. Pour dressing over salad and stir well to evenly coat salad. Cover and refrigerate for at least 2 hours before serving so that noodles can soften.
