Preheat the oven to 320 degrees Fahrenheit (fan forced)

Beat the butter until white. Add the confectioners sugar in two sections and beat well each time until the butter and sugar are well combined and creamy.

Add the eggs, passionfruit and vanilla and beat again.

Add the sifted flour and mix gently to form a soft dough- don't over mix.

On a lined baking tray, roll balls of mixture and slightly flatten with your fingers. TIP: the mixture will stick to your hands, to stop this- wet your hands before rolling the mixture. Allow room between cookies for spreading while baking.

Bake for around 18-20 minutes or until slightly golden. Leave to cool a little on the tray before moving or they will break. Cookies will harden as they cool.
