Ingredients

  • 4 large russet/Idado potatoes cut using a fry cutter or cut in half, then quarted and cut into strips
  • 3 tbsp olive oil divided
  • 3 garlic cloves minced
  • 3 tbsp freshly shredded or shaved parmesan cheese
  • 2 tbsp minced fresh herbs, basil, parsley, etc.
  • 1 tsp salt

Instructions

  1. Preheat oven to 425 degrees. Add half the oil to the pan and place in the oven.

  2. While pan heats up, cut potatoes. Once preheated, add to the sheet pan. Be careful as the pan and oil will be HOT!

  3. Salt the potatoes and place in the oven. Do not stir.

  4. Cook for 20 minutes. At the 20 minute mark, carefully flip potatoes using a metal spatula. Make sure you do not rip off the crispy skin. Return to the oven and cook an addition 10 minutes.

  5. While fries cook, add the remaining oil to a small sauce pan. Add garlic and cook 1 minute, or until fragrant. Set aside until potatoes are done.

  6. When fries are done, add to a big serving bowl. Drizzle with garlic oil and then top with herbs and parmesan cheese. Serve immediately.
