Crock Pot Buffalo Chicken Chili

This warm and comforting Crock Pot Buffalo Chicken Chili is so full of flavor and is the perfect comfort food meal for any season!

Ingredients

  • 1 lb ground chicken breast
  • 3 stalks of celery chopped
  • 3 carrots peeled and chopped
  • 1/2 a medium onion diced
  • 1 8 oz can tomato sauce
  • 1 15 oz can fire roasted diced tomatoes
  • 2 cups chicken stock
  • 6 oz. room temperature cream cheese
  • 1/2 cup hot sauce plus more to taste
  • 3/4 packet of dry ranch seasoning

Toppings:

  • tortilla strips, bleu cheese, green onions, cheddar cheese

Instructions

  1. In a frying pan, brown your ground chicken until cooked through and no pink remains. 
  2. Once browned, add all ingredients, except the toppings, into your slow cooker. Cook on low for 4-6 hours or high for 2-3 hours.
  3. Once done, double check for additional seasoning and serve with your favorite toppings.  You can add additional hot sauce at this point if you like a spicier chili!
