Chicken Parmesan French Bread Pizzas

Chicken Parmesan French Bread Pizza is a delicious way to make a pizza night more fun! Breaded chicken, melty mozzrella cheese, and pizza sauce tastes so good on a loaf of crusty french bread!

Ingredients

  • 1 loaf of French bread halved down the middle
  • 4 tbsp. olive oil
  • 3 garlic cloves smashed
  • 2/3 cup pizza sauce
  • 8 oz. fresh mozzarella sliced
  • 1/2 cup provolone shredded
  • 1/4 cup parmesan cheese
  • basil to garnish
  • For the chicken:
  • 1 chicken breast cut into small bite sized pieces
  • 1/2 cup Italian seasoned bread crumbs
  • 1/3 cup parmesan cheese
  • 1 tsp. garlic powder
  • 1 tbsp. olive oil

Instructions

  1. Preheat oven to 450 degrees and line a large baking sheet with foil.
  2. In a small bowl, add olive oil and garlic cloves. Let side for 10 minutes so that garlic infuses the oil.
  3. Brush each half of French bread with garlic oil and then put in the oven for 5 minutes, or until golden brown. Remove from oven and lower the temperature to 375 degrees.
  4. While bread is cooking, prepare the chicken. In a small ziploc bag, add bread crumbs, parmesan cheese and garlic powder. Shake to distribute. Toss chicken pieces in olive oil and then add chicken to the bread crumb bag. Shake bag until all pieces are coated evenly.
  5. Preheat a non-stick skillet to medium heat and drizzle with olive oil. One hot, add chicken pieces and cook for 4-5 minutes or until cooked through.
  6. Once chicken is cooked, you can assemble your pizza. Spread an even amount of pizza sauce on each piece of bread. Next, add the chicken pieces. Cover chicken with fresh mozzarella and then provolone cheese. Sprinkle with parmesan cheese. Put in oven and bake for about 5 minutes, or until cheese melts. Keep an eye on the bread so that it doesn't get too brown! Tent with foil if browning too fast.
  7. Remove from oven and sprinkle with fresh basil. You can drizzle with any remaining garlic oil for additional flavor! Enjoy!
