Apple Pie Pinwheel Cookies

Ingredients

  • Makes 12 cookies
  • 1 refrigerated pie crust or homemade
  • 2 apples peeled and diced into small pieces
  • 1/3 cup white sugar combined with 1 tbsp. cinnamon
  • 3 tbsp. butter melted
  •  

Instructions

  1. Preheat oven to 375 degrees. Line a baking mat with parchment paper or a silpat.
  2. Roll out your dough and spread the melted butter over the crust.
  3. Sprinkle half your cinnamon sugar mixture over the crust.
  4. Sprinkle the diced apples over the cinnamon sugar, then roll up the crust tightly into a log like shape. Using a sharp knife or unscented dental floss, slice your log into small pinwheels. I cut my log into 10 pieces, but make them whatever size you like. Place each pinwheel on your baking sheet.
  5. Sprinkle remaining cinnamon sugar over the cookies. You are going to have two ugly end piece cookies. Honestly, if you are a crust lover like I am, those two are the best ones!!
  6. Bake for 10-13 minutes or until golden brown. Watch carefully and pull them out when they are nice and golden. Let cook completely on your baking sheet. If you lift them before they cool, the apples will fall out!  These keep really well in an airtight container for up to a week! Enjoy!
