In a heavy bottom pan or wok, heat 2 tbsp. oil until very hot.

Add chicken and marinade to the pan. Put veggies on top of chicken and let cook for 1-2 minutes, without stirring.

Once the veggies start to soften, begin stirring. Add rice and soy sauce and continue to stir. Stir and cook for 3-4 minutes.

While cooking, crack the two eggs and scramble them in a small bowl. Add them to the pan and continually stir until you can see that the egg is completely cooked.

Remove from heat and serve immediately. Enjoy!
