Easy Make Ahead Breakfast Wraps

Admittedly, I don’t eat breakfast, which I know is not a good habit. I just don’t have time to eat at home so these are a great option for me to grab on my way out the door and then reheat when I get to school! Take out of the freezer the night before and place in the fridge. In the morning, reheat for one minute to melt the cheese and warm the other ingredients.

Make Ahead and Freeze Breakfast Wraps

What to put in breakfast wraps?

I love using a tortilla for breakfast sandwiches because they keep everything contained so nicely and are so much less messy. Everything wraps up into a neat little package and makes it perfect for taking on the road! I used eggs, red peppers, sausage, and cheese, but you could use ham, bacon, and any vegetable you like! If you want to keep these vegetarian, leave out the meat and add extra egg.

How to freeze breakfast wraps?

Prepare all your ingredients, including scrambling your eggs. Assemble the wrap, starting with the cheese first. Wrap tightly by tucking the sides in and then rolling. Wrap each sandwich individually in plastic wrap and then place in an airtight bag. Place in the freezer for up to 1 month.

Make Ahead Breakfast Wraps

  • 12 small flour tortillas
  • 12 turkey sausage links precooked
  • 12 slices sharp cheddar cheese
  • 6 eggs
  • 1 red pepper diced
  • 1/2 red onion diced
  • 1 tsp. olive oil
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1/4 tsp. garlic powder

  1. Scramble the eggs in your desired method. I like to scramble in 1 tsp. butter, slowly over low heat. Add half the salt, pepper, and garlic powder.
  2. Brown the sausages. Remove from pan when finished and add 1 tsp. olive oil to the pan.
  3. Add the peppers and onions to the pan and season with the remaining half of the seasonings.
  4. Lay out all your ingredients. To each tortilla add 1 slice of cheese, 1 sausage link, 2 tsp. scrambled eggs and 1 tsp. veggie mixture.
  5. Fold in the edges and then roll. Secure each wrap with a piece of plastic wrap.
  6. To freeze, place all the wraps in a baking dish. To prepare, remove from the freezer the night before to defrost. Cook for 45-60 seconds in the microwave to reheat.
