Grilled Strawberry and Jalapeno CrostiniGuys, it’s hot, really hot. And I am still pregnant. And we don’t have air conditioning. It isn’t uncommon in our area to not have central air. We get only about two weeks of really hot weather. We live in a 100 year old house with radiators, so central air isn’t even an option, but we are looking into other options for next year. I told my husband that I will not spend another summer sweating. I just don’t have it in me.

The microwave has been my best friend, but even better is when I don’t have to cook at all! These Strawberry Jalapeño and Cream Cheese Crostini are the perfect snack because I don’t have to cook anything and requires minimal prep work! Win win!

You know what pregnant girls like to eat? Bread, check. Cheese, check. Topped with something that is sweet and spicy? Perfect.

I bought whipped cream cheese for this, which eliminates the need to have your cream cheese sit out and get to room temperature. I always forget to take my cream cheese out in advance, so having this light and fluffy already makes things easier. I grilled my bread so I didn’t have to turn on the oven, but that’s only because I really like grilled bread. You could toast yours in the oven or just skip it completely if you have a good quality crusty bread.

Grilled Strawberry and Jalapeno Crostini

I topped my crostini with some fresh herbs from my garden for extra flavor and some color! I had basil and mint on hand, but these are optional! Everything looks better with a little green on it!

Grilled Strawberry Jalapeno and Cream Cheese Crostini

Ingredients

  • 1 loaf crusty bread ciabatta or baguette, cut into slices
  • 4 oz. whipped cream cheese
  • 1 jar Smucker's Fruit and Honey Strawberry Jalapeno Fruit Spread
  • 1 tsp. fresh basil and mint rolled and cut into a strips

Instructions

  1. Turn grill onto medium high heat. Lay slices on the grill and cook until golden brown, about 2-3 minutes each side.
  2. Remove from grill and let cool for about 5 minutes. Spread with desired amount of cream cheese and then fruit spread.
  3. Sprinkle fresh herbs over the crostini and enjoy!

  1. I make something similar – kind of like a cream cheese mold that’s covered in a sweet spicy jalapeño preserve. My husband grills the bread while I assemble the rest. It’s great with cocktail.s. No A/C is not even an option in South Florida — mine runs 24/7 — it is literally the only way to survive summer here! Good luck on the heat and your pregnancy!
