Easy Chicken Pad Thai is the ultimate at home version of my favorite Thai restaurant dish! I have been wanting to create a healthy chicken pad thai recipe at home, and I think I nailed it! This recipe is so good but wasn’t bogged down with all the oil and greasiness that you normally get at an Asian restaurant.
I love a good 15 minute dinner and this pad thai recipe is incredibly quick! I made this in less than 15 minutes with a toddler dangling from my legs! I did use store bought pad thai sauce but when I have the time for homemade, we love this recipe for homemade pad thai sauce.
What type of noodles to use for pad thai?
A lot of times for Asian recipes, I will substitute linguini in my stir fries, but for this recipe, I really recommend you pick up rice stick noodles. You can find these anywhere! Even Walmart has a large selection of authentic Asian noodles!
In college, we ate at this dingy, hole in the wall Thai restaurant at least once a week. It was cheap, fast, and most importantly, amazingly delicious. Now that I’m back in my small hometown, there are no Thai restaurants, so when the craving for thai food strikes, I have to make it myself!
I like to cook my chicken separately and then serve on top of the noodles. It just makes for a fresher and less heavy dish, but you could definitely toss the chicken in the sauce! You could also leave the chicken off and let this be a vegetarian pad thai or double the egg for extra protein!

How to make Easy Chicken Pad Thai at Home
Easy Chicken Pad Thai
If you love the flavors of thai food and want to recreate it at home, then you will want to try this incredibly easy Chicken Pad Thai recipe!
Ingredients
- 12 oz rice stick noodles
- 1 lb thinly sliced chicken breast
- 1 cup homemade or store bought pad thai sauce see link in post for homemade
- 1 egg
- 1/4 cup chopped peanuts
- 1/4 cup green onions
- 2 tbsp canola oil
- 1/4 tsp salt
- 1/4 tsp garlic powder
- 1 lime
Instructions

Fill a pot with water and turn heat to high. When water boils, add rice stick noodles. Cook 5-6 minutes, or until tender, but still has a bite. Drain and set aside.

While noodles cook, add oil to a large skillet and heat to medium/high heat. Sprinkle salt and garlic powder on the chicken and then add to pan once hot. Cook on both sides, 3-4 minutes, or until cooked through. Remove from pan.

After chicken is removed, crack an egg into the pan. Let cook for 1 minute, then scramble into large pieces. Add noodles and sauce to the pan. Toss until all is well coated. Let noodles slightly stick to pan, so get that "fried" texture, and then continue to stir for 1 to 2 minutes. Add chicken and then garnish with peanuts and green onions. Squeeze juice of 1 lime over the top.
